Strawberry Overnight Oats & Homemade Raspberry

Ok so, first, let me start by saying that I never measure when I  test recipes (which often means disaster, yes) but it’s pretty hard to mess up this one up, so feel free to try it and to improvise by adding your own twist to it.

Makes 2 Portions

1 1/2 cups gluten free rolled oats
1/4 cup chia seeds
1/2 teaspoon organic vanilla essence
2 cups organic almond milk (mine is homemade, it’s super easy to make honestly)
1 cup organic raspberries
5 large strawberries sliced
1/2 banana

Optional

1 teaspoon of adaptogenic plants such as Ashwaganda or Lucuma
(Lucuma is a good source of zinc, calcium, vitamin C, niacin (vitamin B3) and iron)

Directions

Step 1 Place the oats, chia, vanilla and almond milk in a large jar and mix well

Step 2 Place in the fridge overnight

Step 3 Blend the raspberries in a food processor, add a touch of maple syrup if you’d like

Step 4 Place the raspberry jam at the bottom of your jar and top with overnight oats

Step 4 Add the berries of your choice and the banana

Quick tips

You can swap rasperry jam for apple compote or any other berries that are fresh and in season.
